What You Need to Get


For the Broth:

2 tbsp vegetable oil

1 onion, finely chopped

3 garlic cloves, minced

1 thumb-sized piece of ginger, grated

3 tbsp Pineapple Scotch Bonnet Sauce

400 ml coconut milk

600 ml vegetable stock

1 tbsp soy sauce

1 tsp brown sugar

Juice of 1 lime


For the Ramen Bowl:

200 g ramen noodles

1 cup sliced mushrooms (shiitake or button)

1 cup bok choy, halved

1 carrot, julienned

1 cup sweetcorn kernels

2 soft-boiled eggs (optional)

Fresh coriander (cilantro) for garnish

Sesame seeds for garnish

Lime wedges for serving

 


 

Let’s Make It Legendary

Step 1: Prepare the Broth

1. Heat vegetable oil in a large pot over medium heat.

2. Add onion and sauté until softened (about 5 minutes).

3. Stir in garlic and ginger, cooking until fragrant (1 minute).

4. Add Pineapple Scotch Bonnet Sauce and stir to coat the aromatics.

5. Pour in coconut milk, vegetable stock, soy sauce, and brown sugar. Bring to a gentle simmer and let cook for 10 minutes to meld the flavors.


Step 2: Cook the Vegetables

1. Add mushrooms, bok choy, carrot, and sweetcorn to the simmering broth.

2. Cook for 5-7 minutes until vegetables are tender but still vibrant.


Step 3: Prepare the Noodles

1. While the broth simmers, cook ramen noodles according to package instructions.

2. Drain and set aside.


Step 4: Assemble the Bowl

1. Divide cooked noodles between serving bowls.

2. Ladle hot broth and vegetables over the noodles.

3. Top with a soft-boiled egg, fresh coriander, and sesame seeds.
